Apple Cranberry Bagel Pudding With Almond Butter Glaze
INGREDIENTS
- 1 cup Almond Milk
- 1/4 cup Coconut Sugar
- 1 Egg
- 2 teaspoons Cinnamon
- 1 teaspoon Vanilla
- 4 cups Alternative Cinnamon Spice Bagels, cut into 1-inch pieces
- 1 Apple, sliced
- ¼ cup Dried Cranberries
- 1/4 Cup Maple Almond Butter
- 2 teaspoons Coconut Oil, melted
COOKING INSTRUCTIONS
Preheat oven to 350°F. Mix milk, sugar, egg, cinnamon and vanilla in large bowl until well blended. Stir in bagel pieces, apples, and cranberries. Spread evenly in 1 quart baking dish sprayed with non-stick cooking spray. Bake 35 to 40 minutes or until knife inserted in center comes out clean. Melt Maple Almond Butter and coconut oil in a small bowl in the microwave (about 30 seconds). Drizzle over bread pudding and serve warm.
